Vegan Stir Fry ala Zipdrive
My lady friend (whose name makes the anagram Swan Sin Soul) has decided she's a vegan. No meat, no fish, no poultry, no eggs and no dairy--including cheese.
I often cook for Swan, and this vegan thing has presented quite a wrinkle for me from a culinary perspective.
On the brighter side, it has increased my use of vegetables in my own cooking, and today I created my version of a proper vegan stir fry.
Vegan Stir Fry ala Zipdrive
1 8 oz. ribeye steak, sliced into 1/4 inch strips
1/2 yellow pepper, julienned
1 c. broccoli separated into small florets
1 cup carrots, sliced into thin coins
3/4 c. snow peas
1/2 cup red onion, sliced thin
1 small can pineapple chunks in natural juices, drained (reserve juice)
1 lg. handful cilantro, sliced into chiffonade ribbons
1/2 c. Teriyaki soy sauce
1/4 cup peanut satay sauce
1/4 tsp Tobasco
1/4 c. extra virgin olive oil
salt and pepper to taste
Directions:
Slice ribeye into thin strips, marinate 1 hour in pineapple juice, teriyaki and tobasco.
After marinading, heat the olive oil, then cook steak strips in a large wok or dutch oven until medium well. Set aside and keep warm.
To wok, add remaining vegetables and pineapple chunks and stir fry until crisp, adding the snow peas and cilantro last.
When vegetables are done, mix in peanut satay sauce well.
Add meat, and stir until rewarmed.
Add salt and pepper to taste.
Serves four.
I use organic brown basmati rice as a go-along.
I wish there was a way to disguise the ribeye. I'd invite Swan over for a nice, protein-filled Vegan dinner.

Oh no zipdrive! Vegan is so 80's! Is she becoming pasty faced, tired and is her hair falling out? This is a bad, bad idea, I'm not kidding. Sorry but she ain't invited to our birthday dinner, she might faint.

No, Rowdy, she looks good. I introduced you to her at that party in February, remember?
And never fear, she and I do not dine out together anymore- it's too hard to watch her try to scratch up enough to eat in any normal dining establishment.
As for our birthday dinner- I say NO GIRLS ALLOWED! especially not veggie-tails.

When my carnivore pal Rowdy attended Texas A&M University, she actually took a course called, "Meat."
One might think that course would include excellent barbecue lessons, and apparently it did.
Rowdy can grill the hell out of anything with a face.
Mmmm.
I love my meat..I did do the hippie vegan thing in the 70;s and thankfully outgrew it.
Of course with all the bullshit they put in animals now a days..its probably not that bad an idea.But it IS hard to live that lifestyle and quite expensive.

If you just serve the meat on the side, it's a perfectly good vegan meal (so long as the teriyaki ingredients are within bounds). You might just want to add some marinated firm tofu, though, so your guest can get a little protein, too.
N.B. I love meat too much to even be vegetarian, much less vegan. I offer this comment simply as an interested bystander, not a convert or advocate.
My spouse is a vegetarian, but she eats fish. We coexist very nicely.
Vegan would be too much.
I tried the tofu thing--I found some tofulated fake chicken strips and Swan wrinkled up her beak at it.
I could deal with a vegetarian who eats fish-- I love fish--but this nothing but fruits, grains and veggies bidness is just one huge fart waiting to happen.
What can I say? We're vegetarian too, but vegan's going too far. I luvs teh cheese and eggs too much.
No, no, no.. Vegetarian I can handle, there's a fab vego restaurant where I love - the food is amazing, but there's no way I can go without cheese.
Or icecream!
